Banana muffins are a common favorite, especially among those of us who are looking for something to do with those overripe bananas we have on hand. This easy gluten-free recipe is a treasure, as the aroma of banana muffins just out of the oven and freshly-brewed coffee can transform just about anyone into a morning person.
Coconut flour and almond flour are two staples of gluten-free baking that should be part of every gluten-free pantry. The textures of the two flours combine to form a quality not unlike that of a traditional wheat flour.
Almond flour may be purchased or ground at home simply by running raw almonds through a food processor. Most commercial almond flours are ground with blanched almonds, but removal of the almond skin is not always necessary.
Flax seed meal, which is simply ground flax seeds, is often used as an egg replacement. In this recipe, flax seed meal adds a fluffier texture, resulting in a more rounded top. Flax seed meal may be purchased prepared (already ground), or whole flax seeds may be ground at home in a coffee grinder. Homemade flax seed meal is more budget-friendly and higher in lignans, so those who make use of flax seed meal regularly will benefit by preparing it at home. Both light and dark flax seeds contain the same nutritional value, and sometimes the less-popular dark seeds will be priced even lower.
An overripe banana is essential. The more overripe, the more flavor will be in the finished product. Be careful, though. Rotten banana flavor is not the goal! A small banana should equal about 1/4 cup. Increasing the amount to 1/2 cup will deliver a more pronounced banana flavor. Mash the banana thoroughly so that it blends more evenly with the other ingredients.
Chocolate transforms this into a dessert muffin, although chocolate for breakfast is definitely allowed! The complimentary flavors of banana and chocolate provide a welcome change of pace.
Gluten-Free Banana Muffins
Ingredients:
1/2 cup almond flour
1/4 cup coconut flour
2 tablespoons flax meal
1/4 teaspoon salt
1 teaspoon baking soda
3 eggs, beaten
1 teaspoon apple cider vinegar
1/4 cup raw honey
1/4 cup coconut oil
1/4 cup mashed banana
optional: 1/4 cup gluten-free chocolate chips or broken gluten-free dark chocolate bar or
1/4 cup chopped walnuts
Yield 7 muffins
Directions:
- Preheat oven to 350 degrees.
- Whisk together almond flour, coconut flour, flax meal, salt, and baking soda.
- Combine eggs, vinegar, honey, coconut oil, and mashed banana.
- Add the flour mixture to the egg mixture.
- Fold in optional ingredients, if using.
- Spoon into a lined muffin cups.
- Bake for 25 to 30 minutes.
- Allow to cool. Enjoy!
